A mandoline makes quick preparation and even cooking for this dish.
Preheat oven to 375°F. Pour tomato sauce into bottom of a 1 1/2 - 2-quart casserole dish. Drop the parsley, garlic and chopped onion into the sauce, stir in 1 teaspoon of the olive oil and season the sauce generously with salt and pepper. Arrange the thinly sliced vegetables in layers slightly overlapping. Drizzle the remaining olive oil over vegetables and season with more salt and pepper. Cover and cook for 45 minutes. Remove cover and evenly sprinkle cheese over the top. Cook an additional 5 minutes until cheese is melted. Note: 1 serving contains 2g Protein, 3g Fat, 10g Carbohydrate.
