Combine turkey, sprouts, scallions, water chestnuts, garlic, gingerroot, soy sauce, stock and chili pepper in a medium saucepan. Bring to a boil. Reduce heat and simmer for 15 minutes. Add spinach and cook for a few more minutes. Spoon into serving bowls and drizzle 2 teaspoons of extra virgin olive oil in each bowl. Enjoy an orange for dessert.
