Also includes tomato and squash side dish for a complete meal.
In a bowl mix together yogurt, salsa, cumin and chili powder. Set 1 1/2 cups aside in the refrigerator. Preheat oven to 400°F. In another bowl mix together turkey, olive oil, oat bran, egg whites, remaining seasoned yogurt, cilantro and black beans. Using a small scoop spoon, make tablespoon-sized balls, place on a lightly greased shallow baking sheet and bake in a preheated 400°F for 20-25 minutes or until lightly browned. Serve 2 meatballs on a bed of shredded lettuce with reserved sauce for dipping. Make the Tomato and Squash Side Dish while the meatballs are cooking. Just before serving drizzle 1 tablespoon of extra virgin olive oil over the top of Tomato and Squash Side Dish and serve with 2 meatballs and one-half of an apple for dessert.
