Quite a substantial salad
Heat oil in a large skillet to medium-high and sauté onion and garlic until tender. Add shrimp; cook and stir for 2 minutes. Stir in the stock, green beans and seasonings. Bring to a boil. Reduce heat and simmer uncovered for 5 minutes or until heated through. Place salad greens, tomatoes and peaches on plates and top with shrimp mixture, including sauce as dressing and a sprinkling of grated Parmesan.
