Mix olive oil, salad dressing, lemon peel and sour cream. Set aside. Prepare tomatoes, snow peas, olives and cucumber. In a large, deep glass bowl, starting with a layer of greens, add layers of tomato, cucumber, snow peas, chicken and olives. Top salad with a layer of dressing. Sprinkle cheese over top. You can make ahead and refrigerate. When ready to serve, present and toss.
