I use thawed cooked, frozen shrimp in this recipe, and it make for a quick and easy lunch. Whisk lime juice with vanilla extract in a bowl large enough to hold the fruit salad. Cut the fruit and stir into the lime juice. Set aside. Beat Egg Beaters, oil, salt and pepper together. Cut the shrimp into small pieces and add to Egg Beaters. Spray a small skillet with cooking spray and heat to medium high. Cook until firm. Enjoy with your fruit salad.
