Sole is a great salad topper.
In salad bowl combine lettuce, sprouts, peppers, cucumber and Mandarin oranges. In a small bowl whisk together extra virgin olive oil, 1 teaspoon garlic, lime juice and soy sauce. Pour over vegetables and toss to coat. In a small sauté pan, heat 1 teaspoon oil. Add 1 teaspoon garlic and cook for 1 minute. Sauté sole in same pan, 2 to 3 minutes per side, until it flakes easily. Flake sole and add to salad. Sprinkle with lemon herb seasoning, scallions, chili peppers, and cilantro.
