A good vegetarian meal
Some people may believe that vegetarians cannot enter the Zone. That's simply not true. In Dr. Sears' “The Soy Zone,” published in 2000, chefs served up 100 tasty vegetarian recipes. Here is one of them. Arrange lettuce on large dinner plate. Top with artichoke hearts, tomatoes, onions, garbanzo beans, feta cheese and tofu. In a small bowl, mix together olive oil, red wine vinegar, vegetable stock or water, garlic, oregano and black pepper. Pour over salad and toss to evenly distribute dressing. Serve.
