Cinnamon is the secret ingredient.
Sauté onions and ground turkey breast in 2 teaspoons of olive oil. In a separate skillet sauté eggplant, salt and pepper in 2 teaspoons of olive oil for 3-4 minutes. Turn temperature to low and add turkey mix, diced tomatoes, wine, cinnamon and garlic. Cover and simmer until eggplant is softened and flavors have melded, about 10-15 minutes. Have some grapes.
