This is a simple, tasty, cost-effective recipe that doesn't take too long to prepare. For thick, puree-style soup, only add 1/2 cup of stock. Be careful not to use too much olive oil spray on onions. Lightly spray frying pan with olive oil spray and sauté the onion until soft and transparent. Add asparagus the last few minutes. Set aside to cool. Lightly coat chicken with olive oil spray and cook until lightly browned. Onion and asparagus should be cool enough now to place in food processor with yogurt and chicken stock. Blend until almost smooth. Add asparagus mixture to chicken in pan and gently simmer for 5 minutes, stirring occasionally and taking care not to let it boil. Serve seasoned as desired and drizzled with extra virgin olive oil. Have salad on the side.
