Zoneful salad contains no tortillas
Brown the chicken in 1/4 cup of salsa in a skillet. Set aside to cool. Wipe pan with a paper towel and add olive oil in skillet. Heat to medium to sauté the onion for a couple of minutes before adding the garlic and then add the chili powder, bay leaf and black beans. Stir for a minute or so and then add a cup of water, salt and pepper. Let the beans heat through. Remove the bay leaf. In two bowls, layer the lettuce, chicken/bean mix, mozzarella cheese, cucumber, green onions, black olives and salsa.
