Meal for 1 or side dish for 3
Preheat oven to 350°F. Slice all the veggies and layer them in your favorite casserole dish. Layer them in the order listed with salt and pepper (Mrs. Dash is nice, too) between each layer. Dot with butter, if desired. Bake, covered, for about one hour or until vegetables are tender. Take lid off and top casserole with yogurt, mozzarella, then Parmesan cheese. Bake until the topping is hot and slightly browned, an additional 10-15 minutes. Serve hot. Reheats well. Can be a vegetable side dish or main meal. You can make more or less depending on how many you are feeding.
