Always buy canned Italian tomatoes - they are picked ripe from the vine.
Meatloaf: Blend all ingredients up to the tomato sauce ingredients. Mold into small loaf pan. Cook at 350ºF for approximately 30 minutes Serve hot with tomato sauce. Tomato Sauce: Chop 1 onion and 2 cloves of garlic and toss in pan with 1 teaspoon of olive oil. Add chopped basil and canned tomatoes. Let it bubble for 10 minutes. Add salt and pepper as you like. Place tomato mix in blender and puree. Bring back to pan and let cook another 10 minutes. If you want a clear sauce, press through a sieve, otherwise simply serve as is. Large portions can be frozen in a container on in individual ice cube portions to add to any other recipe. Cook green beans, sprinkle slivered almonds on top, and drizzle with extra virgin olive oil, salt and pepper. Have a plum for dessert. Submitted by: Christine D.
