A Zone take on an old favorite.
Make the Faux Mashed Potatoes according to directions. Meanwhile heat the olive oil in a Dutch oven over medium heat. Stir in onions, garlic, and red pepper. Cook until the onions have softened and turned translucent, about 4 minutes (add some of the vegetable stock if need be). Sprinkle in the chili powder and cumin; cook 30 seconds until fragrant. Add the roast beef and pour in the broth. Bring to a boil over high heat; then reduce heat to medium-low, cover, and simmer about 30 minutes. Stir in the oregano and season to taste with salt and pepper. Top the Faux Mashed Potatoes with the beef mixture and dress with chopped parsley before serving. Have an apple for dessert.
