Vegetables may also be served with another source of protein.
Roasted Vegetables: Pre-heat the oven to 400°F. Cube the vegetables into large bite-sized pieces. Arrange them in a baking dish or roasting pan in a single layer. Drizzle the vegetables with olive oil, garlic, and spices, tossing to coat well. Bake for 30 minutes. While the vegetables are cooking, prepare the cod. Tear off a good-sized piece of foil. Spray the center lightly with olive oil cooking spray. Put the fish in the center of the foil and top with onion, pepper, lemon juice and cheese. Fold foil over the fish, leaving space around the fish. Carefully turn up and seal the sides and the middle so that the juices don’t leak out. After the vegetables have cooked for 30 minutes, put the fish in the oven to cook with the vegetables for 18 minutes. Add the tomato to the vegetable baking dish 10 minutes after you put the fish in. When done, open the foil carefully to prevent steam burns.
