Prepare Cauliflower-mash (Faux Mashed Potatoes) as directed. Meanwhile, sprinkle chicken with salt and pepper. Heat a large skillet coated with cooking spray over medium-high heat. Add chicken to pan and sauté 4 minutes on each side or until browned. Add mushrooms, stock, and bay leaves. Cover, reduce heat, and simmer 20 minutes or until chicken is done. Steam the asparagus to your liking. Drain. Discard bay leaves from chicken pan. Serve over Faux Mashed Potatoes with steamed asparagus drizzled with extra virgin olive oil. Have an apple for dessert.
