A nice way to use kale
Note: I wanted to try kale so I found this recipe on the web, added the chicken sausage and changed carbohydrate and fat sizes to Zone it. Slice sausage into half-moon, bite-sized slices. In a large pot, heat olive oil. Add garlic, onion, and mushrooms. Sauté these ingredients until soft. Add kale and sauté until wilted. Add 3 cups of the broth, sliced sausage, and 1 cup of beans, tomatoes, herbs, salt and pepper. Simmer 5 to 10 minutes. Use a blender to mix the remaining beans and broth until smooth. Mix into soup to thicken. Simmer for 15 to 20 minutes.
