Place the chicken in a glass dish and pour 1/4 cup of the marinade over it. Cover and refrigerate up to 24 hours. Cut all the veggies for the grill and put them in a large bowl. In a small bowl stir the olive oil, balsamic, garlic, salt and pepper. Pour all over the veggies and rub with your hands. Put on a preheated grill for only about 5 minutes (check to your liking). Remove the meat from the marinade and discard any leftover marinade. Grill until internal temperature reaches 165°F, about 15 minutes, flipping halfway through. Note: Don't have a grill? Roast the chicken at 375°F for about 20-25 minutes. The veggies may take 30-35 minutes on a metal baking sheet with low sides, so put them in first. Check them at 15 minutes and rotate.)
