Canadian bacon is a Zone-friendly choice.
In a small bowl, whisk together 1 teaspoon oil, mint, 1/4 teaspoon ginger, 2 teaspoons vinegar, and stock for dressing. Combine remaining ingredients in a salad bowl. Heat remaining olive oil in a medium sauté pan to medium-high. Sauté Canadian bacon, scallops, 1 teaspoon vinegar, and 1/4 teaspoon ginger for 4 minutes on medium-high heat. Top salad with bacon and scallops. Pour dressing over all and toss to coat.
