A nice dinner for four
Preheat oven to 350°F. Cut chicken into four pieces. Bake for 20-30 minutes. Set aside. Raise oven temperature to 400°F. Meanwhile microwave the bacon, blot/drain on paper towel, crumble and set aside. Make the Cauliflower-mash (see recipe in sides and snacks); set aside. Sauté chopped onion and when soft, add garlic and mushrooms in stock. Add spinach and cook until spinach is wilted. Transfer mixture into the bottom of a 9 x 9 glass baking dish. Using the same pan in which you sautéed the veggies, mix the lemon juice, cream of mushroom soup, Italian seasoning, milk and Parmesan. Bring to a low simmer. Pour half over the spinach/mushroom mix and top with cooked chicken, remaining sauce and crumbled bacon. Bake for 15 minutes. Remove from oven and top with mozzarella and continue baking for 10 minutes. Plate the Cauliflower-mash (Faux Mashed Potatoes) and top with the casserole. Make 4 fruit bowls for dessert with the berries and mandarin segments.
