Oat bran is used for breading.
Preheat toaster oven to 375°F. Place 4 teaspoons oat bran on plate and set aside. Mix the 1 1/2 tablespoons Dijon and agave in small bowl. Set aside. Pound chicken breast to 1/4 inch thickness. Place ham and cheese on the chicken breast (cut so it does not hang over). Roll the chicken package up and secure with a toothpick. Roll the chicken in the mustard mixture to coat; then roll in oat bran to coat. Spray Pam on a sheet of aluminum foil and place chicken on sheet. Bake for 20 to 25 minutes. Meanwhile steam broccoli and make sauce. Whisk stock and 1 teaspoon of oat bran together until dissolved. Cook over medium-high heat, whisking until mixture thickens. Reduce heat to low and whisk in yogurt and remaining mustard. Drizzle extra virgin olive oil, salt and pepper over broccoli and tomato and serve with chicken (1/2 each) and sauce. Have 1/2 an apple and 1/2 an orange for dessert.
