Heat 2 teaspoons olive oil in a medium saucepan. Add onions: cook for 1 minute. Add zucchini, garlic, stock and tomatoes. Stir in spices; turn heat to low, cover and simmer for 30 minutes, until zucchini is cooked. Prepare the Cauliflower-mash (Faux Mashed Potatoes) while zucchini is cooking. About 10 minutes before zucchini is done, spray chicken with Pam and season with garlic powder and paprika. Grill until juices run clear, 5-7 minutes on each side. Plate the chicken with the Cauliflower-mash and top with the zucchini mixture.
