Enjoy five different vegetables.
Preheat oven to 350ºF. Mix vegetables, stock, 2 teaspoons olive oil, seasonings, and almonds. Place into a casserole dish. Rub 1 teaspoon olive oil over boneless chicken. Sprinkle with salt and pepper, arrange on top of vegetable dressing, cover dish and bake for 30 minutes. Divide into 2 plates.
