Barley helps carbs add up quickly.
Cook barley according package directions. Slice tomato and set aside. Meanwhile, in a large skillet heat the oil to medium-high. Add ground beef stir and cook until browned. Add onion, mushrooms and green beans, and cook until beans are crisp tender. Stir vegetable stock, soy sauce in cooked barley and add to the meat and veggies. Serve immediately with sliced tomato on the side.
