Faux Mashed Potatoes will become a favorite.
Prepare the Faux Mashed Potatoes. In a large bowl combine the baby spinach, mushrooms, strawberries and red onion to make the spinach salad. Set aside. Gently mix in the dressing just before serving. Combine the curry powder, salt and pepper in a small bowl; rub mixture over chicken. Place a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Cook chicken 5 minutes on each side or until done. Remove chicken from pan and keep warm. Add apricot spread, lemon juice, and water to the skillet, stirring until smooth. Cook over medium heat for 1 minute. Serve the spinach salad in separate bowls and the chicken over the Cauliflower-mash (Faux Mashed Potatoes). Spoon sauce over chicken; sprinkle with lemon rind. Have half an apple for dessert.
