This is a great breakfast for vegans.
In a large cooking-spray sprayed skillet, heat the oil on medium-high heat. Add the tofu, onion, zucchini, asparagus, and garlic. Stir fry until crisp-tender - about 3 minutes. Add tomatoes, basil or parsley, soy sauce, cumin, turmeric and cayenne pepper and stir fry until the tomatoes are heated through, about 1 minute. Serve immediately.
