Here’s something different for breakfast.
Mash 1/3 cup of the strawberries in a bowl. Add the remaining strawberries to another bowl and drizzle with the balsamic vinegar. Allow to marinate for 10 minutes and add in mashed berries. In a 325°F oven roast the almonds in a single layer on a small pan. Remove from the oven after 7 minutes and cool. Chop roasted almonds coarsely. Assemble salad by placing spinach in a large bowl and gently mixing in the low-fat feta, mandarin orange sections and strawberry/vinegar mix. Top with fat-free feta cheese and chopped almonds.
