Freeze any extras. Reheat in the toaster for a quick breakfast or snack.
Mash 2/3 cup blueberries and 1/3 cup strawberries in a bowl (to top cooked pancakes); set aside. Add remaining ingredients except remaining berries and Pam to a blender, a few at a time, and blend until smooth. Stir in olive oil, 1/3 cup blueberries and 2/3 cup of sliced strawberries. Spray a large skillet with olive oil Pam and heat to medium, (batter will sizzle when dropped if ready. Cook pancakes. Top with mashed berries.
