Here’s a great zone-friendly alternative to quiche. You can make it on a Sunday or an evening during the week and serve it two mornings in a row. Combine dried tomato bits, oil and lemon juice in a small bowl. Cover and soak for at least 3 to 4 hours at room temperature to soften or refrigerate overnight. Preheat oven to 350°F. Coat a 9x9x2 baking pan or 13x9x2 pan with non-stick cooking spray. Spread spinach over bottom of pan and sprinkle with cheese. Whisk remaining spinach pie ingredients in bowl. Stir in tomatoes with soak liquid. Stir and pour over spinach and cheese. Bake for 25 to 30 minutes until center of pie is firm to the touch, top of pie is golden, and a tooth pick inserted into the center comes out clean. Mix the applesauce and strawberries in a bowl, then divide into 4 portions. Serve with pie.
