Black beans and salsa enhance this recipe.
Mix egg whites with olive oil, salt, pepper and Southwest seasoning. In a small pan, sauté vegetables with olive oil. Spray a medium sauté pan with cooking spray and add mixture of eggs and sautéed vegetables. Cover and cook for about 2 minutes at medium-low heat. Turn omelet over and top with cheese. Cover and cook for another 2 minutes. Put on plate and top with salsa and black beans.
