Lentils are an easy way to meet carb requirements.
Mix Egg Beaters with olive oil and stir in lentils. Spray a skillet with cooking oil a few times and bring up to medium/high heat. Add egg/lentil mixture and cook through before turning. Flip over with spatula and add the spinach and cheese. Cook until cheese melts, then flip in half to complete omelet. Place cooked omelet in a flat dish and wait a minute until it cools a bit.
