Omelet Roll without the roll
Preheat oven to 450°F. Spray a 9x13 inch baking pan with olive oil Pam. Combine eggs, milk, oat bran, salt and pepper in blender or food processor; cover and process until smooth. Pour into prepared baking pan. Bake until set, about 20 minutes. Sprinkle with cheese, scallions and sliced olives. Carefully loosen edges of omelet from pan. Starting from the short edge of the pan, carefully roll up omelet. Cut into 3 equally sized pieces. Serve seam side down on a plate with an orange on the side.
