This could be a 5-minute meal. Just make the fruit salad and cook the eggs the night before.
mandarin orange sections (fresh or unsweetened)
egg whites (hardboiled eggs, discard yolks)
Make the fruit salad in a good-sized bowl. Slice the strawberries and gently stir in mandarin sections and blueberries. Boil eggs for 10 minutes; cool. Cut eggs in half and discard yolks. Dice hard boiled eggs whites and avocado into a separate bowl. Stir in salsa. Serve with fruit salad on the side.
