Warmed Fruit mixture over cottage cheese tastes great.
Bring apple, cherries, maple syrup, water and lemon juice to boil, stirring often. Reduce heat to low. Add spices and raspberries, cover and cook for 5-8 minutes until fruit is soft. Remove from heat. Stir in vanilla and additional lemon juice if desired. Let sit covered for 10 minutes. Stir and let sit 10 minutes uncovered. Mix cottage cheese with olive oil and almonds. Spoon the slightly warm compote over cottage cheese and sprinkle with paprika.
