Mix eggs, tofu, cheese, oats, milk, salt and pepper together in bowl. Cook over medium-low heat in oiled covered frying pan (I prefer cast iron) until lightly golden on one side. Flip over and cook 1-2 minutes more on other side. Garnish with salsa and have an orange.
