Like a quiche without a crust
Make a sauce for the fruit salad by mashing 1/2 cup strawberries 1/4 cup mandarin oranges and mix with lime juice and vanilla. Set aside. Preheat oven to 350°F. Spray an 8-inch-square baking dish with non-stick cooking spray. In a large bowl, beat eggs until fluffy. Add Greek yogurt, oat bran, Canadian bacon, diced onion, tarragon, shredded cheese and olive oil. Pour into prepared baking dish. Bake for 20 to 25 minutes, until set and knife inserted comes out clean. Cut into 8 squares. Serve with berries.
