An unusual, tasty combination
Microwave the bacon per package instructions. In a small bowl with a fork crush and mix 1/2 cup of blueberries with Polaner sugar-free preserves. Set aside for topping. Mix the Egg Beaters, ricotta cheese, vanilla extract, cinnamon, almond slivers and 1/2 cup blueberries in a bowl. Pour into a small heated cooking-oil-sprayed skillet and cook like an omelet. Scoop the blueberry/preserve mixture on the omelet.
