Using frozen broccoli and onions will save time, but they must be thawed.
Preheat oven to 350°F. Mix first nine ingredients in a large bowl. Pour into a cooking-spray coated casserole dish. Bake for 1 hour until set in center. Meanwhile make the fruit salad. Mix lemon juice and vanilla in a bowl large enough to hold the sliced apples. Add the apple slices to a bowl. Be sure to completely coat the slices with the liquid. Add the strawberries, 1/2 cup of blueberries and kiwis to large bowl. Pick the apple slices from their bowl and add to large bowl with remaining fruit: keeping the liquid in the bowl. To the liquid bowl add and mash 1/2 cup blueberries. Pour liquid over fruit. Set aside and serve after the quiche.
